Jamaican Salsa - cooking recipe

Ingredients
    1/2 cup minced red onion
    6 tablespoon lime juice (bottled or fresh)
    2 serrano chilies, seeded and finely minced (and green pepper)
    1 ripe mango, diced (pineapple, too)
    2 teaspoon minced garlic
    1/2 teaspoon salt
    3 tablespoon fresh cilantro, minced
    4 small tomatoes (or red pepper)
Preparation
    Put onions in strainer over a bowl (green and red pepper also). Pour 1 quart boiling water over them and let them sit in the water, while you prepare other ingredients. Then combine and mix thoroughly. Cover tightly and chill for 2 hours before serving.
