Rigatoni With Sausage, Peppers And Eggs(Prep: 10 Minutes, Cook: 20 Minutes, Serves 4) - cooking recipe

Ingredients
    1 lb. Italian sweet sausage, removed from casing
    3 medium green bell peppers, quartered and cut into 1-inch strips
    1 medium onion, quartered and cut into thin lengthwise slices
    4 oz. mushrooms, trimmed and quartered
    2 garlic cloves, bruised with the side of a knife
    12 oz. rigatoni or other large tubular pasta
    2 eggs, beaten
    1/4 c. grated Parmesan cheese
Preparation
    Brown sausage meat in a large skillet, stirring and breaking up pieces with the side of a fork; drain off excess fat.
    Add the peppers, onions, mushrooms and garlic.
    Cook, covered, over low heat until the peppers are tender and the onion begins to turn golden, about 15 minutes.
