Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick-cooking oatmeal
    1 c. buttermilk
    1 c. flour
    1 tsp. baking soda
    1 tsp. baking powder
    1/4 tsp. salt
    1/3 c. vegetable oil
    1/2 c. brown sugar
    1 egg
    1/3 c. dried apricots
    2 Tbsp. chopped pecans
    1 1/2 Tbsp. sugar
Preparation
    Combine oatmeal and buttermilk; mix well.
    Cover and let stand for 30 minutes.
    Preheat oven to 375\u00b0; line muffin cups.
    Mix together flour, baking soda, baking powder and salt.
    Combine oil, sugar and egg; mix.
    Stir into oatmeal mixture.
    Pour oatmeal mixture into flour, just to moisten.
    Add apricots and nuts. Bake 20 to 25 minutes.
