Garden Rice Salad - cooking recipe

Ingredients
    6 oz. pkg. long grain and wild rice (Uncle Ben's)
    1 c. mayonnaise (may need a little more)
    1/4 c. plain yogurt
    1 c. sliced celery
    1 c. cubed tomatoes
    1/2 c. diced cucumber
    1/8 tsp. salt
    1/8 tsp. pepper
    1/4 c. dry roasted peanuts
Preparation
    Cook rice as directed on package, omitting butter.
    Cool. Toss with next 7 ingredients.
    Cover and chill.
    Before serving, garnish with peanuts.
    (Can add chicken, ham or turkey, if desired.)
    Serves 6 to 8.
