Chitterlings - cooking recipe

Ingredients
    3 to 5 lb. fresh chitterlings
    4 hot peppers
    9 Tbsp. salt
    1 Tbsp. black pepper
    1/4 onion
    2 c. flour
    1 pt. sour cream
Preparation
    Clean thoroughly.
    Place in large pot and cover with water, 3 tablespoons salt and 2 red peppers.
    Bring to a boil and boil 10 minutes.
    Pour water off.
    Put on fresh pot of water and repeat, adding 1/4 onion.
    Pour water off.
    Repeat, because the third time is the charm.
    Cut in bite size pieces, roll in sour cream and put in brown bag with 2 cups flour, 3 tablespoons salt and 1 tablespoon black pepper.
    Fry in hot oil.
    Serve hot with hot pepper sauce or dip in table syrup.
