Zucchini Casserole - cooking recipe

Ingredients
    2 lb. zucchini, sliced
    1/4 c. chopped onion
    1 can cream chicken soup
    1 c. sour cream
    1 c. shredded carrots
    1 (8 oz.) pkg. herb seasoned stuffing mix
    1/2 c. melted oleo
Preparation
    Cook zucchini and onions in boiling salted water for 5 minutes; drain.
    Mix soup and sour cream.
    Stir in carrots; fold in zucchini and onions.
    Combine stuffing mix and oleo.
    Spread half stuffing mixture in a lightly buttered 12 x 7 1/2-inch baking dish.
    Spoon vegetable mixture over stuffing.
    Sprinkle remaining stuffing mixture over vegetables.
    Bake in 350\u00b0 oven for 25 to 30 minutes. Makes 6 to 8 servings.
