Oat Bran Muffins - cooking recipe

Ingredients
    2 1/4 c. Quaker or Total oatmeal
    1/4 c. light brown sugar, packed or 1/2 c. equivalent Sweet 'N Low
    1/4 c. walnut pieces (optional)
    1/4 c. canned blueberries, rinsed and drained, or fresh berries
    3/4 c. skim milk
    1/2 c. egg substitute or 2 eggs
    1 Tbsp. baking powder
    1/2 tsp. salt
    2 Tbsp. light oil (canola)
    1/4 c. honey or dark molasses
Preparation
    Mix dry ingredients thoroughly; mix wet ingredients including blueberries, then blend together.
    Bake at 425\u00b0 for 15 minutes. Use large muffin tin, grease bottoms only and fill 1/2 to 2/3 full.
    Makes about 10 muffins.
