Sweet And Sour Sausage - cooking recipe

Ingredients
    1 green pepper
    1 onion
    1 tomato
    1 lb. smoked sausage
    3 Tbsp. cornstarch
    1/2 tsp. ground ginger
    3 Tbsp. vinegar
    3 Tbsp. soy sauce
    1 (18 oz.) jar apricot preserves
    2 c. drained pineapple chunks
Preparation
    Cut green pepper, onion, tomato and sausage in pieces and saute 5 minutes.
    Combine cornstarch, ginger, vinegar, soy sauce and apricot preserves; stir into sausage mixture.
    Heat to thicken.
    Add pineapple chunks and heat.
    Serve over rice.
