Potato Latkes Or Potato Pancakes - cooking recipe
Ingredients

4 large potatoes, grated and squeezed dry in paper towel *
1 large onion, grated
1/2 tsp. baking powder
1 tsp. salt or to taste
1/2 tsp. pepper or to taste
2 eggs, beaten
3 Tbsp. flour
1/2 c. vegetable oil or margarine
Preparation

In a large bowl, blend grated potatoes and onion; stir in beaten eggs.
Add flour, baking powder, salt and pepper.
Mix thoroughly.
Heat oil in frypan.
Drop potato mixture in by tablespoonful.
You may press cakes with spatula.
Cook until golden brown and crusty on both sides.
Drain on paper towels. Serve with bacon, applesauce or ham.
Serves 6.
