Mexican Rice Dinner - cooking recipe

Ingredients
    1 lb. ground beef or turkey
    8 oz. shredded cheese (Cheddar or Jack, divided)
    4 slices bacon, cooked crisp
    1 small onion, chopped
    1 small bell pepper, chopped
    chopped jalapenos
    6 c. cooked rice
Preparation
    Cook onion and bell pepper in a small amount of oil.
    Add ground meat and brown.
    Drain off fat.
    Mix together ground meat mixture, rice, half the cheese and jalapenos to taste.
    Put in large casserole dish.
    Top with crumbled bacon and remaining cheese.
    Bake at 350\u00b0 until cheese melts and dish is heated through, uncovered.
    Makes 6 to 8 servings.
