Squash Carrot Casserole - cooking recipe

18 saltine crackers
1 (8 oz.) pkg. cream cheese, softened
2 cans cream of chicken soup
2 eggs, beaten
1/2 c. melted butter
2 1/2 lb. sliced, cooked yellow squash
6 small carrots, grated
1 c. chopped onion
1 c. herb stuffing mix
Preparation

Layer crackers in bottom of a greased 9 x 12-inch baking dish. Mix cream cheese, soup, eggs and butter in a large bowl. Stir in drained squash, carrots and onion.
Spoon into baking dish. Sprinkle with stuffing mix and bake at 350\u00b0 for 30 to 40 minutes. Serves 10 to 12.
