Eggplant Parmesan - cooking recipe

Ingredients
    1 medium (1 3/4 lb.) eggplant
    1 slice white bread, crumbled
    1/4 c. grated Parmesan cheese
    2 Tbsp. butter or margarine, melted
    2 c. spaghetti sauce
    1 1/2 to 2 c. shredded Mozzarella cheese
Preparation
    Pierce skin of eggplant several times; arrange eggplant on paper towel on glass oven tray.
    Heat 6 to 9 minutes until eggplant is almost tender.
    Let cool, then peel, if desired, and slice into 1/2-inch pieces.
