Carrots Elegante - cooking recipe

Ingredients
    1 lb. carrots, sliced thin
    1/4 c. raisins
    1/4 c. oleo or butter
    3 Tbsp. honey
    1 Tbsp. lemon juice
    1/4 tsp. ground ginger
    1/4 c. sliced almonds, unpeeled
Preparation
    Cook carrots in 1/2-inch boiling water for 8 minutes.
    Drain. Turn carrots into a 1-quart baking dish.
    Stir in raisins, oleo, honey, lemon juice and ginger.
    Bake, uncovered, in a 375\u00b0 oven for 35 minutes.
    Stir occasionally; spoon into serving bowl. Sprinkle with almonds.
    Makes 4 servings.
