Butternut Squash Casserole - cooking recipe

2 c. cooked mashed butternut squash
2 eggs, beaten
1/2 c. milk
2 Tbsp. + 2 tsp. margarine, melted
2 Tbsp. shredded coconut
1 tsp. vanilla
1/2 tsp. ginger
2 tsp. sugar or substitute
Preparation

Preheat oven to 350\u00b0.
Spray 1 1/2-quart casserole with Pam. In large bowl combine all ingredients.
Pour into dish.
Bake until set, 50 to 60 minutes.
Makes 4 servings.
