Spicy Corn Salsa - cooking recipe
Ingredients

2 (17 oz.) cans whole kernel corn, rinsed and drained
1 (4 oz.) can chopped green chiles, drained
1 (2 1/4 ox.) can sliced pitted ripe olives, drained
1 large tomato, chopped
2 to 3 jalapeno peppers, seeded and finely chopped
3 Tbsp. white vinegar
1/3 c. olive oil or vegetable oil
1/2 tsp. salt
1 Tbsp. chopped fresh cilantro (optional)
Preparation

Combine first 8 ingredients in a nonaluminum bowl; add cilantro, if desired.
Cover and chill at least 2 hours, stirring often.
serve with tortilla chips or as a relish with grilled beef or chicken.
Yields 6 cups.
