Japanese Curried Chicken - cooking recipe

Ingredients
    1 lb. chicken, cut up
    3 Tbsp. vegetable oil
    3 cloves garlic, chopped
    1 tsp. coriander
    1 tsp. laos or ginger
    1 red chili, crushed
    2 tsp. salt
    1 large onion, chopped
    1 1/2 tsp. turmeric
    1/2 tsp. cumin
    1 tsp. lemon grass
    1 c. coconut milk from 1/2 coconut
Preparation
    Rub chicken with salt and fry in hot oil until golden brown. Remove from pan. Fry onion and garlic. Add turmeric, coriander and cumin. Fry for 1 minute. Add laos, lemon grass and chili. Return chicken to this mixture. Add coconut milk and cook uncovered until the chicken is tender.
    Serves 6.
