Banana Muffins - cooking recipe
Ingredients

3 Tbsp. vegetable oil
1 egg
1/4 c. skim milk
1 1/3 c. mashed very ripe bananas (about 3 medium)
1 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
Preparation

Beat egg, oil and milk.
Stir in bananas.
Mix dry ingredients together and stir in banana mixture until flour is moistened. Fill muffin tins 1/2 to 2/3 full.
Bake about 20 to 25 minutes in 400\u00b0 oven.
Yield: 12 medium muffins.
Exchange per muffin: 1 muffin = 1 Bread and 1 Fat.
