Tortellini Vegetable Salad Made Easy - cooking recipe

Ingredients
    2 c. frozen cheese tortellini
    1 small red pepper, cut into thin bite-size
    3/4 c. broccoli flowerets
    1 small carrot, thinly sliced
    1/3 c. sliced pimento (stuffed)
    3/4 c. mayonnaise
    1/3 c. purchased pesto sauce
    1/4 c. milk
    2 Tbsp. Parmesan cheese
    2 Tbsp. olive oil
    2 tsp. vinegar
    1/2 tsp. pepper
    1 clove garlic, minced fine
    fresh spinach lettuce (to line bowl)
Preparation
    Cook tortellini (firm); drain and cool.
    In a large bowl combine red pepper, broccoli, carrots, olives and tortellini (when cool).
