Huevos Con Chorizo(Eggs With Mexican Sausage) - cooking recipe
Ingredients

2 links chorizo
4 eggs
2 Tbsp. milk
1 tsp. onion salt or 1 small onion, chopped
1/2 c. grated Cheddar or Monterey Jack cheese
2 Tbsp. bacon drippings or oil
Preparation

Slice chorizo in nickel-size pieces; remove outer skin.
Beat eggs with milk, onion and grated cheese until foamy.
Heat bacon drippings or oil in large skillet.
Blend chorizo into egg mixture.
Fry in skillet until lightly browned.
Turn and cook other side, until egg and chorizo are done.
Serve immediately with hot flour tortillas.
Serves 3 to 4.
