Creamy Pumpkin Tapioca - cooking recipe

Ingredients
    1/2 c. skim evaporated milk (in can)
    1 c. or more pumpkin
    1 Tbsp. plus 1 tsp. quick cooking tapioca (not pudding)
    1 tsp. vanilla
    3 pkg. Equal or 1/4 c. sugar
    1 tsp. cinnamon
    pinch of nutmeg
Preparation
    Spray 1-quart baking dish with Pam.
    Mix all ingredients.
    Let set 10 minutes.
    Bake at 325\u00b0 for 25 to 35 minutes.
