Arroz Con Leche Rice Pudding - cooking recipe

Ingredients
    1 c. short grain rice
    2 c. water
    1/2 tsp. salt
    4 c. milk
    grated rind of 1/2 lemon
    1 stick whole cinnamon or 1/4 tsp. ground cinnamon
    1 tsp. vanilla
Preparation
    Boil rice, water, salt hard for 5 minutes.
    Drain excess water; add remaining ingredients.
    Let milk come to a boil slowly. Lower heat and simmer for 10 minutes stirring occasionally.
    Add 1/2 cup sugar and cook until liquid is absorbed, approximately 20 minutes.
    Taste for sweetness, and add more sugar to taste. Remove cinnamon stick and chill thoroughly before serving.
