Watermelon Rind Pickles - cooking recipe

rind of medium watermelon
3 c. vinegar
9 c. sugar
1 c. salt
1 c. water
3/4 oz. pickling spice
Preparation

From one medium size watermelon,
trim\trind, leaving a pink edge for color.
Cut the rind
into small squares (1 to 1 1/4 inches).
Make a brine of 1 cup salt to 1 gallon water and soak rind overnight.
