Coconut Cream Cheese Frosting - cooking recipe
Ingredients

1/3 c. plus 1 Tbsp. butter
1 1/2 c. shredded coconut
6 oz. cream cheese
4 c. powdered sugar
1 or 2 Tbsp. milk
1/2 tsp. vanilla
Preparation

Melt 1 tablespoon butter in saucepan. Add coconut. Saute until just golden brown, stirring constantly.
Remove from heat. Cream remaining butter. Add cream cheese, powdered sugar and milk.
Beat after each addition. Add vanilla and 1 cup sauteed coconut. Spread on cake. Sprinkle with remaining coconut.
Will ice a 13 x 9-inch cake.
