Louisiana Gumbo - cooking recipe

Ingredients
    1/4 c. vegetable oil
    1 1/2 c. chopped onion
    1 c. chopped green pepper
    4 c. chicken broth
    16 oz. can whole tomatoes
    1 tsp. Tabasco pepper sauce
    3 c. cooked rice
    1/3 c. all-purpose flour
    1 c. chopped celery
    3 cloves minced garlic
    2 1/2 to 3 lb. chicken, cut up
    1 bay leaf
    1 (10 oz.) pkg. frozen okra
Preparation
    In a large saucepot, heat oil.
    Add flour and cook over low heat, stirring often until roux turns dark brown in color and develops a nutty aroma.
    Add onion, celery, green pepper and garlic.
    Cook until vegetables are tender.
    Slowly add chicken broth a little at a time, stirring after each addition.
    Bring to a boil.
