Chocolate Zucchini Cake - cooking recipe
Ingredients

2 sticks softened unsalted butter
1/2 c. vegetable oil
1 3/4 c. granulated sugar
2 large eggs
1/2 c. buttermilk
2 tsp. vanilla
1/4 c. plus 2 Tbsp. unsweetened cocoa powder
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1/2 tsp. salt
2 c. grated zucchini
1 c. semi-sweet chocolate chips
3/4 c. walnuts
1 (8 oz.) pkg. cream cheese, softened
1 (1 lb.) box confectioners sugar
Preparation

With an electric mixer, cream 1 stick of butter, oil and the sugar.
Beat in the eggs one at a time, beating well after each addition.
Beat in the buttermilk and 1 teaspoon of the vanilla. Stir in 1/4 cup of the cocoa powder, flour, baking soda, cloves, cinnamon and salt until the mixture is just combined.
Fold in the grated zucchini, which has been patted dry with paper towels. Stir in the chocolate chips and the walnuts.
Pour the batter into 2 well-greased 9-inch round baking pans.
Bake at 350\u00b0 for about 25 minutes or until tester comes out clean.
Let the cakes cool 10 minutes, then turn out of pans.
Cool completely on racks.
