Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. canned pumpkin
3/4 c. buttermilk baking mix
1/2 tsp. nutmeg
1 tsp. pumpkin pie spice
2 tsp. cinnamon
1 c. chopped nuts
Preparation

Heat oven to 375\u00b0.
Grease a 15 x 10 x 1-inch jellyroll pan. Line pan with waxed paper.
Grease wax paper.
Beat until fluffy the eggs and sugar.
Beat in pumpkin.
Stir in buttermilk baking mix, nutmeg, pumpkin pie spice and cinnamon.
Pour into pan and spread evenly.
Sprinkle with nuts.
Bake 12 to 14 minutes. Invert onto towel dusted with powdered sugar.
Peel off waxed paper.
Roll up cake and towel from short side.
Place on wire rack and cool completely.
Unroll cake.
Spread with filling. Re-roll cake and refrigerate.
