Ashley'S Crab Puffs - cooking recipe

Ingredients
    3/4 c. mayonnaise
    1 c. cooked crab (shrimp)
    1 Tbsp. chopped scallions
    1/8 tsp. cayenne pepper
    2 1/2 Tbsp. lemon juice
    salt
    48 (1 1/2-inch) rounds bread
    2 egg whites
Preparation
    Preheat broiler.
    Combine mayonnaise, shrimp, scallions, pepper, lemon and salt to taste.
    Beat the egg whites until stiff. Gently fold in shrimp or crab mixture.
    Spoon a mound on each bread round.
    Place on a cookie sheet.
    Put under broiler until lightly brown.
    Serve immediately.
    Makes 48 puffs.
