Key Largo Roast Pork - cooking recipe

Ingredients
    1 (3 lb.) boneless pork loin roast
    2 tsp. salt
    1/2 tsp. freshly ground pepper
    2 tsp. oregano
    3 medium cloves garlic, crushed
    1/4 c. lime juice
Preparation
    Combine ingredients in plastic bag. Refrigerate overnight, turning bag occasionally. Roast pork until meat thermometer registers 170\u00b0. Allow about 30 minutes per pound. Midway through roasting, pour marinade over meat. Serves 6.
