Healthful Homemade Nuggets - cooking recipe

Ingredients
    2 whole chicken breasts, cut into bite-sized chunks
    1/2 c. olive oil
    3 to 4 cloves garlic, minced
    generous grinding of fresh pepper
    1 c. fine bread crumbs for dredging
    1/4 tsp. cayenne or more to taste
Preparation
    Marinate chicken pieces in olive oil, garlic and pepper for approximately 30 minutes.
    Pour off marinade.
    Mix bread crumbs with cayenne.
    Lightly dredge chicken pieces in mixture.
    Spread in a single layer on a cookie sheet and bake at 475\u00b0 for 15 minutes.
    Run under broiler for extra browning.
    Serve warm with a dip of honey mustard, barbecue or sweet and sour sauce.
