Eggplant Parmesan - cooking recipe
Ingredients

1 medium, thin sliced, peeled eggplant
3/4 c. Italian bread crumbs
1 egg, beaten
5 or 6 ripe roma tomatoes, peeled
1 sliced green pepper
1 sliced onion
2 gloves garlic, crushed
sliced mushrooms
8 oz. shredded Cheddar
Preparation

Roll eggplant in egg, then Italian bread crumbs.
Fry in hot oil on both sides.
Place into 8 x 10-inch baking dish.
