Ingredients

2 beaten eggs
2 c. milk
1 Tbsp. melted shortening
2 c. flour
1 tsp. salt
1 Tbsp. baking powder
1 tsp. sugar
2 c. grated raw potatoes
1 medium sized onion, minced
Preparation

Combine eggs, milk and shortening.
Sift flour with salt, baking powder and sugar; add to egg mixture and beat smooth.
Add potatoes and onion and blend well.
Bake on a hot griddle.
Makes 12 to 15 pancakes.
