Marcia Abrams' Chicken - cooking recipe
Ingredients

4 to 5 chicken breasts, skinned
1 yellow onion
8 oz. fresh mushrooms
2 to 3 Tbsp. olive oil
1 Tbsp. Dijon mustard
1 to 1 1/2 c. white wine
artichoke hearts in water (not marinated in oil)
2 c. whole canned tomatoes
tarragon
paprika
garlic cloves
basil
oregano
pepper
capers
Preparation

Saute the onion in olive oil, adding one or two crushed garlic cloves when the onions are almost brown.
Add sliced mushrooms.
Let it all brown for a minute or two.
Then add chicken and brown on both sides.
Add white wine and tomatoes. Add seasonings to taste.
While it is simmering, add artichoke hearts.
Spread them out around bottom of pan so they will cook/thaw evenly.
Stir in a tablespoon each of mustard and capers.
Turn flame to low and simmer 10 to 20 minutes, or until chicken is done but not tough.
