Sweet Potatoes And Bananas - cooking recipe
Ingredients

3 large sweet potatoes, peeled
2 bananas
1 Tbsp. lemon juice
1/4 c. brown sugar, packed
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 oz. dark rum
2 Tbsp. butter, melted
Preparation

Peel potatoes and cut into 1-inch slices.
Place in pot, cover with water and bring to a boil.
Reduce heat and cook 15 to 20 minutes or until tender.
Drain.
Peel bananas and cut into chunks.
Toss with lemon juice to prevent discoloration.
Place potatoes and bananas in a shallow roasting pan. Sprinkle with brown sugar, nutmeg and salt.
Drizzle with rum and melted butter. Cover with aluminum foil and bake at 375\u00b0 for 30 minutes.
Remove from oven and mash or puree potatoes, bananas and all of the liquid.
Pour mixture into a casserole dish; cover with aluminum foil and warm in a 350\u00b0 oven for 15 to 20 minutes.
Serves 5 or 6.
