Braised Pork Medallions With Apple - cooking recipe
Ingredients

1 lb. pork tenderloins
1/2 tsp. black pepper
1/2 tsp. sage, crushed
1/2 tsp. dried thyme, crushed
1/2 tsp. ground cinnamon
1 tsp. vegetable oil
1 medium onion, minced
1 large apple, cored and coarsely chopped
1/2 c. apple cider
Preparation

Slice pork crosswise into eight medallions.
Mix seasoning together and coat pork.
Heat oil in large skillet.
Cook pork on both sides until brown.
Remove from pan and reserve.
Cover and keep warm.
Add onion and apple to skillet.
Cook until golden. Add apple cider to skillet; heat to a simmer.
Put pork slices in simmering liquid.
Cover and simmer for 5 minutes.
Serve immediately.
Yields 4 servings.
