Smoky Pasta And Bean Soup - cooking recipe

6 slices bacon, diced
1 medium onion, finely chopped
2 celery stalks, finely chopped
1 large carrot, grated
2 cloves garlic, crushed
1/2 tsp. crushed red pepper
2 c. canned tomatoes, crushed
2 cans Northern white beans
3 c. chicken broth (or more)
3/4 c. macaroni or small pasta
freshly grated Parmesan cheese
Preparation

In a large skillet, saute bacon until some fat is rendered. Add onion, celery, carrot, garlic, and red pepper.
Saute until vegetables are soft, about 10 minutes.
Add tomatoes and cook another 10 minutes.
Stir in beans, add broth, and bring to a gentle boil.
Add pasta and cook gently until pasta is tender, but firm.
Serve immediately with Parmesan cheese sprinkled on top.
