Almond Skillet Coffee Cake - cooking recipe
Ingredients

3/4 c. margarine or butter
2 eggs
pinch of salt
3/4 c. almonds, sliced, slivered or chopped
1 1/2 c. sugar
1 1/2 c. sifted all-purpose flour
2 tsp. almond flavoring
sugar to sprinkle on top
Preparation

Melt margarine and mix with sugar.
Add eggs, flour, salt and flavoring.
Mix well.
Pour batter into 9-inch iron skillet which has been lined with aluminum foil, shiny side up.
Cover top with almonds and sprinkle on sugar.
Bake 30 minutes in 350\u00b0 oven.
May take longer in some ovens, cake should be light brown.
Remove cake from pan when it cools and peel off foil.
Do not remove foil while it is hot.
Wrap tightly to store.
Freezes well.
