Dodo'S Eggplant Casserole - cooking recipe
Ingredients

1/2 c. chopped onion
2 garlic cloves, minced
1 medium eggplant, peeled and cut into 1-inch cubes
2 c. water or broth
1 whole egg and 1 egg white
herb seasoning
1/4 c. shredded low-fat cheese
Preparation

Spray heavy saucepan with Pam.
Lightly brown onion and garlic.
Add eggplant and water or broth; cook covered until tender, stirring occasionally.
Pour mixture into greased casserole.
Beat eggs until frothy.
Pour over cooked eggplant. Sprinkle with seasoning and cheese.
Bake in 350\u00b0 oven for 25 to 30 minutes until cheese is melted.
Serves 4.
