Tangy Spinach L'Orange - cooking recipe

Ingredients
    1 (11 oz.) can mandarin oranges, drained and coarsely chopped
    1 Tbsp. red wine vinegar
    1 tsp. sugar
    spinach leaves, cleaned and broken into bite size pieces
    1/4 c. chopped red onion
    1 Tbsp. corn oil
    2 tsp. Dijon mustard
    48 Triscuits wafers
Preparation
    In small bowl, combine oranges, onion, oil, vinegar, mustard and sugar.
    Set aside.
    On each Triscuits, place spinach leaf; top with teaspoonful of orange mixture.
    Serve immediately.
