Wild Rice And Artichoke Heart Chicken Salad - cooking recipe

Ingredients
    4 c. boiled, pulled chicken
    4 c. cooked wild rice
    2 cans quartered artichoke hearts
    3/4 c. diced celery
    3/4 c. diced carrots
    4 bunches minced green onions
    3/4 c. diced roasted red peppers
    1 c. extra virgin olive oil
    1/2 c. Dijon mustard
    1 Tbsp. black pepper
    1 tsp. garlic powder
    1/2 c. minced fresh parsley
    1/2 c. minced fresh cilantro
    juice of 5 lemons
Preparation
    Mix last 7 ingredients using a whisk. Set dressing aside.
    Now combine all other ingredients, mixing by hand in a large bowl. Pour dressing over salad and toss until well incorporated.
