Crab Enchilada - cooking recipe
Ingredients

1/2 c. olive oil
4 buttons garlic, minced
1 medium onion, minced
1 medium green pepper, minced
1/2 tsp. oregano
2 bay leaves
1 tsp. salt
1 tsp. black pepper
1 small can tomato sauce
3 c. water
2 doz. blue crabs
1 small can tomato paste
Preparation

Heat olive oil; simmer garlic, onion, green pepper, oregano and bay leaves in oil.
When transparent, add tomato sauce, tomato paste, water, sugar, salt and pepper.
Bring to boil and simmer for 1 hour.
Add crabs.
Cover and cook on low for 10 to 12 minutes.
Serve over rice.
