Sinful Mousse - cooking recipe

Ingredients
    12 oz. pkg. chocolate chips
    3 oz. rum extract
    5 eggs
    2 c. heavy cream
    1/4 tsp. vanilla
    1 tsp. sugar
Preparation
    Melt chocolate chips in double-boiler or microwave until smooth.
    Stir in rum extract; cool.
    Separate 3 of the eggs.
    Beat whites until stiff.
    In a large bowl, beat 2 remaining eggs with 3 yolks until creamy.
    Stir in chocolate mixture; fold in egg whites.
    Whip 1 cup cream.
    Fold into chocolate mixture.
    Pour into 2-quart souffle dish.
    Chill at least 2 hours.
    Before serving, whip remaining 1 cup of cream with vanilla and sugar. Spoon on mousse to serve.
