Chateaubriand - cooking recipe

Ingredients
    1 larded beef tenderloin
    1/2 c. dry white wine
    1 Tbsp. meat extract
    1 shallot or green onion
    1 Tbsp. butter
    1 tsp. tarragon
    pinch of cayenne pepper
    1/2 tsp. lemon juice or more if desired
Preparation
    Bake larded beef tenderloin in flat, foil lined pan for 3/4 hour in a 450\u00b0 oven.
    Remove string and larding.
    Slice and pour sauce over meat.
