Chicken Cacciatora(Pollo Alla Cacciatora) - cooking recipe

Ingredients
    2 (1 lb.) fryer chickens
    1/4 c. olive oil
    2 bay leaves
    1 c. mushrooms (canned)
    1 clove garlic, chopped
    1 medium onion, chopped
    1 Tbsp. parsley
    16 oz. tomatoes
    1/2 c. water
Preparation
    Wash and clean
    chicken;
    pat dry.
    Cut chicken into 20 pieces, cutting breast into 2 pieces.
    Heat oil in deep frying pan or Dutch oven.
    Saute
    chicken and bay leaves in oil until well browned,
    approximately
    15
    minutes.
    Remove chicken and set aside.
    Add
    mushrooms,
    garlic
    and
    onion
    to drippings. Saute over medium
    heat
    until onion is tender.
    Add remaining ingredients and cook
    for 35 to 45 minutes, stirring occasionally. Serve with rice or
    a side of spaghetti.
    Makes 8 to 10 servings.
