Nan'S Roasted Potatoes - cooking recipe

Ingredients
    6 large potatoes, cut in thin circles
    2 large onions, cut in circles
    salt and pepper
    oregano
    1/2 c. olive oil
    1/2 c. water
    1/2 to 1 c. Parmesan cheese (reserve)
Preparation
    In a large roasting pan, pour some oil and add potatoes, onions and spices, a little at a time; stir often to coat with spices.
    Top with cheese.
    Add water around the edges.
    Cover pan with foil.
    Cook in 350\u00b0 oven for 1 hour.
    When potatoes are cooked, take foil off and brown under the broiler.
