Baked Cod Fillets - cooking recipe
Ingredients

1 onion, minced
1/2 c. minced celery
6 Tbsp. butter
2 c. solid-pack tomatoes, broken up
1 bay leaf
1/4 tsp. thyme
1 Tbsp. brown sugar
2 Tbsp. white wine vinegar
salt and pepper to taste
2 lb. fresh cod, haddock or halibut fillets
Preparation

Saute onion and celery in butter until golden.
Add other ingredients, except for fish.
Simmer covered for 30 minutes. Preheat oven to 350\u00b0.
Cut fillets into serving pieces and put in a greased baking dish.
Pour sauce over fish.
Bake for 30 minutes or until fish flakes easily.
Serves 5 to 6.
