Turkey Soup - cooking recipe

Ingredients
    1 turkey carcass (with meat left on)
    4 stalks celery, diced
    4 carrots, diced
    6 cans chicken broth (real if you make it)
    salt and pepper to taste
    1 large diced onion
    3 cloves garlic (optional)
Preparation
    Bring turkey carcass to simmering (remove any skum).
    Boil in water just to cover.
    Simmer until meat on carcass comes off easily.
    Remove turkey carcass and save broth in pot that the turkey simmered in.
    Take meat off carcass and put in pot, along with the celery, carrots, chicken broth, salt and pepper to taste and onion.
    If you like a \"thicker\" soup, you may add a cup of white rice, brown rice or wild rice.
    Simmer all of this for about an hour.
    This makes a lot of soup, which may be put in small containers and frozen.
