Orange Cranberry Muffins - cooking recipe

2 3/4 c. plain flour
3/4 c. packed brown sugar
3/4 c. white sugar
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1 1/2 sticks butter, melted
2 large eggs, lightly beaten
3/4 c. buttermilk
1 Tbsp. pure vanilla extract
3/4 tsp. pure lemon extract
3/4 tsp. pure orange extract
3/4 c. drained and chopped mandarin orange pieces
3/4 c. dried sweetened cranberries
Preparation

Preheat oven to 375\u00b0. Put paper liners in 12 muffin cups. Place dry ingredients in large bowl and stir to mix. In medium bowl, combine melted butter, eggs, buttermilk and flavorings. Add to dry mixture and fold in. Do not overbeat! Fold in oranges and cranberries. Drop batter into muffin cups. Sprinkle sugar on tops for a little crust. Bake 20 to 25 minutes. Cool in pans for 10 minutes then place on wire racks to cool.
