"Irish Brain Food"(Snackin' Spuds) - cooking recipe

Ingredients
    8 medium red potatoes (about 2 lb.), unpeeled, scrubbed and quartered
    2 medium garlic cloves, minced
    3 Tbsp. olive oil
    1 1/4 tsp. dried oregano
    1 1/4 tsp. dried rosemary
    1/4 tsp. salt to taste
    1/4 tsp. crushed red pepper flakes
Preparation
    Preheat oven to 425\u00b0.
    Line a jelly roll pan with foil.
    In mixing bowl, toss potatoes with olive oil, garlic and seasonings until well coated.
    Transfer to jelly roll pan and arrange in a single layer.
    Bake, uncovered, 30 minutes.
    Turn them over and continue baking until well browned, about 15 to 20 minutes longer. Serve immediately with a big bowl of sour cream for dipping and lots of toothpicks!
