Mike'S Mexican Chicken - cooking recipe
Ingredients

1 pkg. boneless chicken breasts (1 for each person)
2 cans whole green chilies (mild; there's about 3 in a can so allow enough for 1 on each chicken breast)
1 jar salsa (mild)
1 pkg. grated Cheddar cheese
2 to 3 c. cooked rice (white rice or Spanish rice)
Preparation

Rinse chicken and pat dry. Drain chilies and take out the seeds. You may want to wear rubber gloves to do this. Wrap each chicken breast in a green chili. Place in a greased casserole dish and pour salsa over them. Cover with foil and bake for about 20 to 30 minutes or until done. At this point, you may want to drain off some of the juices from the pan. Top with the cheese and put back into the oven until cheese melts. Serve over the rice.
