Red Beans And Rice - cooking recipe

Ingredients
    1/4 lb. bacon or ground sausage
    1/2 c. onion, chopped
    1/2 c. celery, chopped
    1/4 c. green pepper, seeded and chopped
    2 c. rice, cooked
    2 (16 oz.) cans tomatoes, pureed
    3 tsp. salt
    1/4 tsp. pepper
    1 tsp. sugar
    1/8 tsp. Tabasco
Preparation
    In a large frying pan, fry bacon until crisp (or sausage until brown).
    Remove from pan.
    Crumble and reserve.
    Saute onions, celery and green pepper in bacon/sausage grease until tender.
    Add rice, tomatoes, crumbled bacon and seasonings.
    Cook on top of the stove for 10 minutes.
    Pour into large, greased casserole dish. Cover tightly and bake at 350\u00b0 for 1 hour.
